I learned about this salt (and many other cooking hints) from, a book called Salt, Fat, Acid, Heat by Samin Nosrat. The author details the reason for all four ingredients. I wish I had a book like this 40 years ago!
Do two things
1) Buy this salt
2) Buy Salt, Fat, Acid, Heat .

I happened to love it. It's true that it's less intense. It's easy to work with. It makes food taste great and not overly salty.
I wish it was widely available though. I can't just go down to the local supermarket and pick this up. I don't know why. It's expensive but worth it.
That is where Diamond Crystal comes in. The crystals are uniformly sized and are the least salty salt by measure that I know of. Meaning if I have a recipe that calls for 1/2 teaspoon of salt, I know that if I use Diamond Crystal that I won't be over salting it and I can always add more later. If I use Morton or some other brand, I'm almost always oversalting the dish with the same measurement.
It does cost a bit more, but given that food costs are so high I really prefer to spend a little more on salt knowing that there is no way I'll ruin a dish by oversalting it. And really. of all the ingredients, spending a bit more on Kosher salt isn't going to break the bank compared to spending more on other ingredients.
The other thing I love about Diamond Crystal is if I am making a recipe for myself - writing something down that I know I will want to recreate later - If I use Diamond Crystal when I make that recipe I know I'll be able to recreate the salt levels over and over again.
My local supermarket has been out of Diamond Crystal for almost 5 weeks now and I ended up buying a box of Morton Kosher Salt and regretted it because I ruined a few dishes with oversalting. So I ordered here online and wanted to make sure I shared with you all why it is worth getting Diamond Crystal.

There are many people out there that attempt to cook at home and fail to recreate a dish they had in a restaurant. ONE reason is salt!
Many home cooks use iodized table salt (which vaguely tastes of metal), Himalayan Pink salt (which tastes of minerals) or sea salt (which, shockingly, is VERY salty). These are finishing salts. We almost never use them to cook.
Diamond Krystal is what 95% of Chef's use. It's just course enough to show you how much is on your food, it's actually less salty and it provides some texture. It's also what we use to bake.
So if you are trying to cook successfully at home, I would highly recommend this particular salt.
