Where are we now?

Anodizing is not a chemical coating. It is an environmentally-safe process that contains no chemical additives, dyes, CFC’s, PTFE’s or PFOA’s. The anodizing process is the reason Fat Daddio’s Bakeware will never chip, flake, peel, pit or rust. |
Unlike conventional aluminum or steel bakeware which may react poorly with acidic foods, the non-reactive surface of Fat Daddio's Anodized Aluminum Bakeware makes it compatible with a wide-variety of recipes including those with citrus or tomato-based ingredients. |

I would normally never let anyone see one of my cakes not decorated but just look at the height you can get. The chocolate cake in the picture is straight out of the oven. No trimming of the sides, top isn’t leveled, just sitting on its baking rack too cool. I didn’t take a picture with the ruler (wish I had) but the cake is almost 3” tall. Follow the instructions that come with the pan. You can’t go wrong.
On the negative side, the "release" of the cake layer is awful, even after liberally pre-greasing and dusting the pan. Also, the pan stays hot much longer than other bakeware I've used, so if you leave the cake in the pan you may dry it out.
The "gold" pans from William Sonoma have a MUCH better release, but cost about 3x more, so it's a matter of deciding what your trade-offs will be., especially if you bake a lot (or if you are not at putting putting cake pieces that stuck to the pan back together)
