I've been baking cakes a few times a week for more than two years now. I had originally purchased some basic Wilton 9" cakes pans, which have a flare shape - not straight sides. I was tired of battling the flared edges on my cakes, so I read reviews on Bon Appetit and found that these wonderful Fat Daddio's pans were highly rated and they're made in my state! They perform great. Nice even bakes, straight sides, easy release when I use parchment and butter to coat the pans first. And I haven't needed to use my cake belts around the pans - these pans create flat cakes naturally. Wow! They clean up easily, just do not put them in your dishwasher. But cleaning them is so simple, that it's no concern that they should not go in the dishwasher. Don't hesitate. If you love baking cakes with beautiful, straight sides, look no further and support a Spokane based company.

Today I made a carrot cake (Easter is tomorrow). The pan is sturdy and appears to be good quality. I greased it well, lining the bottom with parchment paper and greasing that. I had no problem tipping the cake out of the pan. And cleanup was simple. I'll be seeking more recipes for small cakes so I can use this pan again.

On the plus side, these pans do a really nice job evenly baking a cake, and clean up is pretty easy if you let them soak.
On the negative side, the "release" of the cake layer is awful, even after liberally pre-greasing and dusting the pan. Also, the pan stays hot much longer than other bakeware I've used, so if you leave the cake in the pan you may dry it out.
The "gold" pans from William Sonoma have a MUCH better release, but cost about 3x more, so it's a matter of deciding what your trade-offs will be., especially if you bake a lot (or if you are not at putting putting cake pieces that stuck to the pan back together)
