I make limoncello. Where peeling just the rind off is a bear and soaking it for a month in vodka is exasperating , zesting with these shallow, shallow grater blades eliminates ALL the pith. It also seems to have infused the vodka completely in 3 days! Photo taken right after adding vodka to orange and lemon zest. Jar on the right is filled with peels. You can see the difference. I always make sure to wear a steel reinforced glove on the hand holding the fruit. Learned that the grater is super sharp the hard way. Be warned.
