A great 10" and 12" skillet pans seems larger for good reason
Merten & Storck carbon steel skillet w/stainless steel handle. UPDATED REVIEW For both 10" and 12" skillet I really like these pans, heavy but not too heavy and seem firmly planted to the stove and the stainless steel handles keep things cool and worth the upgrade. For the seasoning make sure exhaust and room fans are going to blow that smoke out of the house because it can get smokey to build up that natrual non-stick surface but you should never need to buy another pan. There is no chemical non-stick surface, it's all natural and these pans have a larger base cooking area instead of a larger bend for the sides like most pans have leaving a smaller cooking surface. In one pic i show two pans 10" and the 12" in front which seems huge. The 10" has way more cooking area than compable pans I've used. In these pics notice the pre-seasoning wearing off a bit after first cook. It should get lighter as it wears off but then keep seasoning the pan with a clear oil like vegetable oil or beeswax other preferred seasoning to season both inside and outside the pan to build up that natural non-stick finish which should turn blacker as it builds up. My only gripe is, i wish they came with a vented cover for the price. So far so good 👍 UPDATE: I see a lot of complaints about finish look or rusting, this is by people who don't season the pan or clean it properly. To clean the pan, while hot i just use a silicone scraper to remove everything and maybe rinse with water if needed or use a chain scraper if it has any burnt remains left on it. Then heat the pan add seasoning wax or other seasonor to a paper towel and wipe pan down and heat until it begins to smoke a little and pan browns or blackens in color. This is the maintenance required for a life long non-stick pan. Also someone asked for exact dimensions of my 10" pan and so i posted pics of them. 10" skillet pan is 2" high, 8.5" cooking surface, 10.25" edge to edge cross width 12" skillet pan is 2" high, 9.5" cooking surface, 12" exactly edge to edge cross width.

    After my ceramic coating pans lost their non-stick properties after about six months, I had finally given up and decided to use something more durable and learn to cook properly. I had just received my cast iron pan a few days earlier and I was watching a video on how to properly cook a steak from Gordon Ramsay (recorded about 10 years ago). I started to wonder what type of pan he was using, since the cast iron was so unwieldly and really didn't heat up that evenly. That was the start of my pan rabbit hole.

    Long story short, I ended up with this one (10") because the handle looked comfortable, the price wasn't too bad in the case that I didn't like it, and I read an online review that said the pan wasn't very good because it was too non-stick right out of the box.

    Anyways, yeah, I love this pan. It has totally revitalized my interest in cooking. It has given me so much confidence because I now I can get restaurant quality food at home. This pan heats way faster and way more evenly than cast iron. It also is much lighter weight and easier to manage.

    I was really afraid of the pan warping because I have a glass top electric stove, but it really hasn't. Occasionally when the pan gets really, really hot, it might warp ever so slightly, but as it cools it goes back flat. I always preheat it on a lower heat setting, like 2.5 on my stove, then ramp it up after a few minutes to where I want it. And I always use a burner that's larger than the pan, so the entire base is getting heated as evenly as it can.

    These pans are also really durable. Due to the seasoning process I thought I was going to have to baby it. But, honestly, I found that it really is fine no matter what you do. And you can always re-season if you have to. For stuck on bits, I used a chainmail scrubber a few times, but noticed some scratching in the seasoning, so I just switched to using some soap with a non-scratch pad if I need to, and the seasoning is fine. My wife even cooked some rice-a-roni in there the other night, which I don't recommend for this, but OK, it's still fine.

    Love these pans and carbon steel in general. Wish I learned about these 20 years ago.

    This pan is as non-stick as a good Teflon or Ceramic pan, but uses zero PFOA's in the manufacturing process and has no PFTE's on the pan itself. Finally someone has come up with an environmentally friendly alternative that actually produces a better pan. It will outlast either "teflon" or ceramic, and is just as non-stick. This manufacturer in particular does a fantastic job of pre-seasoning the pan so it is absolutely non-stick and ready to cook on day one. I have tried other carbon steel pans and while they will eventually do the same job, they require work to get the pan properly seasoned. (Some say they come pre-seasoned, but not like this one.) All you need to do is follow the simple care instructions - wash by running under hot water and one swipe with a soft scrub pad does it - no soap needed. It comes absolutely clean with zero effort. Dry with a paper towel and put it away. This handle is also the best on the market - never gets hot due to the "forked" connection to the pan which dissipates the heat before it reaches the handle (if you want an engineering explanation, it is because of the increased surface area to cross sectional area ratio). A well seasoned cast iron pan will also do a great job, but will be much heavier and in my experience, requires more attention. This pan is medium weight, cooks evenly, can be heated to 660 degrees F, and frankly is the perfect pan. You will never need a teflon type non-stick pan in your kitchen - even to cook eggs, if you buy this pan.

    The Merten & Storck data sheet that was included with the shipment has an error.
    The data sheet references 250 degrees F for reseasoning the pan; I contacted Merten & Storck because that seemed low to me - they acknowledged that the sheet is wrong and that the proper temperature is 450 degrees F.
    Other than that I'm pleased with the Carbon Steel pans I have acquired from them. Properly treated they are as nonstick as any nonstick pans I've used in the past and there is not the concern of contamination of food because Merten & Storck does not use the chemical coating other manufacturers use.

    I keep this 8 inch pan with stainless steel handle on my stovetop because we use it all the time. It heats up quickly, so when I want to fry an egg or make a quick grilled cheese sandwich, or reheat a small amount of leftovers, it’s great. Maintaining the finish is easy (I’m accustomed to cast iron, and this gets treated the same). It’s also pretty lightweight. It’s much better than my stainless steel pan (takes forever to heat up and clean) or teflon coated pan (tired of buying a new pan every year or two). The stainless steel handle is definitely worth the upgrade - it stays cool, and it fits well in my hand. I’ve had this pan for over a year, and it really is fantastic.

    I really like this pan. I bought it to replace some old Teflon pans which are possibly bad for your health. You have to be careful because it heats up fast and can get quite hot so I use it on low to medium heat on a gas range. It cleans up easily and I always dry it thoroughly right away so it doesn’t think about rusting. The stainless steel handle is very nice but I did buy a smaller version with the regular handle and it works just as well so If you want to save some money, go for that one. Either way, you can’t go wrong with these excellent fry pans.

    Was very surprised to have this pan warp on an induction cooktop after using about 8 times. Followed instructions, did not immerse in water or add cold water, did not use in dishwasher (despite advice on listing on Amazon that suggested it could be put in a dishwasher) etc.

    A lot of money to spend on an item that warped this way. Have reached out to Merten (not covered by Amazon because we did not use for a few months after we got it so too late) and will update this based on response from them.

    UPDATE: Merten, after getting copies of invoice and photos of warped pan, have replaced the pan. Still no idea why pan warped though.
