First of all ... I have to admit I passed this over a few times because I was concerned about the head being slightly offset. My thinking is that could make it more difficult for a nice, even stroke which is required to flatten a chicken cutlet or pork for schnitzel. After using this, it is completely the opposite. The occasional mis-strike with a flat head could put one of the corners through a thin chicken breast or send pieces of nuts flying sideways. It's like going from 'Hulk Smash!' to Gordon Ramsay precision ... flat vs. offset.As much as I like this feature now, I do have to say that I wish the head on this was a tad bigger. It gives you a little more control around the edges of a cutlet so you can see what you are doing but for larger cutlets like schnitzel, it makes it a bit tougher to get uniformity, which is key. It's lightweight enough that I could pound 20 or so cutlets without a break.90% of those here are likely making chicken or veal cutlets for Chicken or Veal Parmigiano. And this does as good a job as any. It's sturdy and feels good in the hand ... the offset head gives you more control/better aim (trust me, I was a skeptic) than a flat head ... and it is very lightweight, which my countertops appreciate from an impact perspective. I've used heavy mallets which actually loosened bolts in the drawers underneath. Will this last? Time will tell. My last composite metal mallet snapped after 5 years or so. For the price and to have less weight ... as long as I get at least 3 years out of it, I'm good.Another ding against this is that its not dishwasher friendly. Before decideding to buy this, I read another review which said the user put it in the dishwasher and the somewhat shiny metal turned dark grey and anything she/it touched a left grey sooty residue. That's a bit scary as I am using this to prepare food but I am guessing the chemical reaction won't occur with acidic foods.Beyond chicken or veal ... this thing is pretty handy. I decorate cakes and I use it to pound dried fruits like apricots flat and then cut them into shapes like hearts and diamonds. It takes some work but 50 or so of these on a cake look amazing. It's also great for nuts. I use the spiked end to help trap them so they don't go flying but the offset head helps focus the pieces towards the backsplash. If you put the nuts in a ziplock baggie, that solves the problem but you'd use the flat end. If you are making rolled dates, it will really make small pieces of almond for the coating.Finally, butterscotch candy and oreos are no match for this while I make ice cream. You need to have smaller pieces so the paddle doesn't stick. A few taps to some oreos with this, werther's original carmel candies or heath bars and you're ready to blend into homemade ice cream.One last tip ... if you get some small potatoes, you can boil them and then pound them down into potato cakes with the smooth side and pan fry them them with olive oil, thyme, salt and pepper. A bit crisp on each side and soft in the middle. Then rinse and dry your mallet and store it in the drawer or a utensil bin. The smaller, offset head does make it easier to store. Don't be afraid of the slightly offset head ... I am now a believer. It makes the job easier and you have way more control.
