It tastes just like regular sugar, and is naturally found in all kinds of fruits and veggies. And the best part is that there's no calories and no impact on the glycemic index. Not joking. It even bakes like sugar! It is a little less sweet, though, so for every cup of regular sugar it calls for, add in an extra 1/3 cup.
Allulose was also discovered almost a 100 years ago and had been studied thoroughly. It was finally made commercially viable a few years ago when a less expensive way of extracting allulose from fruits/vegetables was discovered. And the price keeps coming down.
Pros:
*Tastes EXACTLY like table sugar!
*0 calories
*0 Glycemic Index
*Can be used/baked like it's regular sugar!
*Natural part of many fruits and vegetables (you've already been eating this your whole life)
*Families with a diabetic can finally all eat the same things again!
Cons:
*It's more costly than regular sugar
*It cannot be used for hard candies (the only shortfall in cooking with it)
TLDR: If you absolutely hate the taste of artificially sweetened "diet" foods, there's finally hope! It's natural, it's already in your fruits/veggies and it tastes like SUGAR!!!
I mostly bake with it, I like to do half allulose and half erythritol, I find that the half of allulose helps tone down the cooling effect of the erythritol while keeping it sweet. I sometimes like to put a spoonful in my coffee, but I'm used to sugarless coffee so that spoon is more than enough to sweeten the coffee for me. Last night I made coffee jelly using it, so it definitely holds up in cold dishes as well as hot dishes. It tastes sweet just like sugar, when by itself or with erythritol (although the erythritol helps if you want the sugary texture). I haven't done any dishes where the sugar doesn't need to be blended in (like, fruit with sugar dusted on top), so I can't say whether the bitterness is present there, but once blended it goes away.
My only gripe is the price for how little you get, especially when the bag instructs you to use it in a 1.5x ratio so you go through it fast. Regardless, I've already placed an order for a larger bag, as allulose has made a permanent spot in my cooking!
