This costs more than others, but the smooth machined cooking surface is worth it. Easier to clean and ensure you have all food particles removed.
You will get inconsistent heating over a gas flame (contrary to some thinking, cast iron isn't nearly as conductive as aluminum, and far less than copper) which I measured with an infrared camera. For a more consistent temperature over gas, use an aluminum heat spreader between the pan and burner. I see only 25F temperature range this way, and about 70F if it is not used.
Pluses: looks good and durable (in most parts, except for the "spring" handle), with excellent heat distribution (it is hard to ruin the cast iron heat distribution with "designing").
Minuses:
The handle is horrible - the shape of the handle makes it impossible to hold with full control and it is a nightmare to clean. Why make the design so complicated, with ZERO benefits (other than the looks)?
- You can not hold these handles without protection - the spring is just slightly cooler than all the surrounding parts, and you can burn yourself with the end of the handle anyway. So, what's the point?
- Because of the handle's round shape it is very difficult to control the tilt of the skillet (the skillet might spin in your hand because of the "slick" handle). A simple cast iron FLAT-ish handle that is a part of the main body of the skillet would be a lot better.
The weight of the skillet is much higher than other cast iron (competitors') products of the same size and shape. It is only good to sit on a burner - extremely difficult to lift it up.
The "non-stick" property is not any better than non-machined surfaces of simple (and 10 times cheaper) products.
I would NOT recommend these products unless you are getting them for OTHER THAN COOKING reasons. :-)
