With bolder-than-ever flavors and spectacularly scientific techniques, cookies have truly never been more fabulous.

One of NPR's "Books We Love" 2022

"Do we need another cookie book? As far as I’m concerned, the answer is always “yes.” Here we have the classic cookie food groups (bar, drop, rolled, slice-and-bake, etc.), but they’ve been wickedly turbocharged with unique flavor hacks. Why wouldn’t you insinuate a layer of ganache into your black-bottom lemon squares? Why wouldn’t you powder freeze-dried raspberries for your sugar cookies? And for heaven’s sake, why wouldn’t you add milk powder to your browned butter for the world’s most insanely malty chocolate chip cookies? Prepare your secret-stash cookie jar, folks – you’re gonna need it." - T. Susan Chang for NPR

"Delicious and dazzling...for cookie fanatics, this one is sure to be a hit!" - Publisher's Weekly, starred review

Editorial Reviews

Review

"Taylor and Arguin (The New Pie), two scientists who fell in love and married thanks in part to a shared affection for baking, whip together their passion and smarts in this delicious and dazzling volume. Employing rigorous techniques and innovative flavor combinations, they offer 100 boundary-pushing takes on cookies, from dropped and rolled confections to ones shaped like mustaches and bananas. Riffs on both American and international classics rely on unconventional ingredients to boost flavor. Bronze butter chocolate chip cookies, for instance, use dry milk powder to deepen toffee notes, while the addition of red curry paste to peanut butter cookies yields a Southeast Asian–inspired twist. Insightful intros to sections feature expert ingredient and equipment guides (perfectionists will especially relish the detailed breakdown of scoop sizes and “proper portion placement” for drop cookies). To balance the seriousness, the authors sprinkle in cheeky rhyming headnotes―“The addition of fig/ Is something you’ll dig,” they declare before introducing their fig and maple nut slices―and nods to cultural touchstones, including the rye and honey–based Everybody Ryes (an homage to the late Stephen Sondheim) and heart-shaped Stonewalls that get their rainbow speckles from Fruity Pebbles. For cookie fanatics, this one’s sure to be a hit. Agent: Joy Tutela, David Black Literary. (Apr.)"

Entertaining cookbook with fantastic recipes
I'm generally a very simple baker who makes the same classic recipes using the least amount of dishes possible, so I waited to write this review until after I attempted my first recipe for Raspberry Lemonades. This book was the perfect boost to get me to try some new techniques and flavor combos when I had extra time to splurge on baking, and I was rewarded with amazingly soft but slightly crunchy cookies with a classic but complex taste. I never boiled a lemon before but it was totally worth the time investment and having to wash my food processor!I also really enjoy just reading this book. I love the conversational tone and personal notes from the authors, along with the scientific explanations for ingredient purposes and uses (both in the intro chapters and included in the recipe steps). This is a great book for anyone looking to add a little more adventure to their cookie baking.

I bought this book for myself but decideo give it to my niece. After I looked more closely at it a 2nd time I decided I need this book for myself. There are a lot of useful, interesting Ideas in this book... I hope you'll enjoy this cookbook and find some new cookies to enjoy!

I was beginning to get a bit jaded about the value of ANOTHER cookie book, but for some reason I fell for this one and I am glad I did. The first cookie I made was "Everybody Ryes" , mostly because it looked easy. And it was easy. So much so that I began to wonder if anything that was this easy would really be that good. No need to fear. This cookie is to die for melt in your mouth delicious. Just a little bite. Not a big hearty thing, but absolutely wonderful. It's going on my list for Christmas Cookies for sure. The second cookie I made was the "Portland Pie Squares." Except I used rhubarb that I had cooked down instead of cherries. I live in the Midwest. 'Nuff said. They came out great. A similar recipe I had tried previously tasted great but went from bars to granola really quickly. This recipe stayed together and was just the right mix of moist and crunch. Suffice to say, the next time I feel like baking cookies, this book is where I'm going to start. Also, it has great "things my mother never told me" about all sorts of things cookie - from how to proportion bar cookies to the color, number, and volume of different cookie scoops and more. So glad I bought it.

This book is amazing! The perfect mix of inspiration and precise directions. The ingredient lists are so easy to read as you measure. The beautiful photos have me saying “wow I have to make that”. The information and techniques they share will help you make your family favorite recipes better too. The recipes are creative and some are twists on a traditional cookie. If you don’t have their pie book “the new pie”, order that for yourself too.

Its no secret that Taylor and Arguin know how to bake. They are talented, creative, smart and this book is all of those....but...it needs pictures. People eat with their eyes, and even though some of these sound appealing, with the complexity of the recipes, I feel they need a boost to get you more interested.

I heard the authors of this cookbook on a radio show talking about their new book and some of their recipes. I loved the idea of taking some tried and true recipes and switching them up a little. They have cakes, bars, cookies and even savory treats. Looking forward to trying many of these recipes. I also love reading the explanations and different tricks to try to get the best result.

  • Reviewed in the United States on May 3, 2022
I purchased this book right away, after having enjoyed their pie cookbook. I have made several recipes so far and really enjoyed them. Like other reviewers said, these are not run-of-the-mill recipes and some require uncommon ingredients or somewhat advanced techniques (e.g. browning butter). The authors walk you through step by step and even point out where newbies might have difficulty. The results have been impeccable and get five-star review from my ravenous teens! I can't wait to see what these two do next!
