How to Cook Rice in the TOYO CASE Japanese Donabe Clay Pot Rice Cooker Pot
1. Measure and wash rice.
Measure rice. One rice cooker cup is about 150g of rice.
Wash the rice.
After washing the rice, add an appropriate amount of water and soak it for 20 to 30 minutes.
2. Put the washed and soaked rice in a clay pot.
*Water amount for 1 rice cooker cup: approx. 6.76 to 7.44 fl oz / approx. 200 to 220 cc.
*Water amount for 2 rice cooker cups: approx. 13.52 to 14.9 fl oz / approx. 400 to 440 cc.
*Water amount for 3 rice cooker cups: approx. 20.28 to 21.63 fl oz / approx. 600 to 640 cc.
3. Cook with middle flame till steam comes out.
Heat up with middle flame till steam comes out of the the hole on the outer lid.
*Make sure to keep the flame middle, never cook on a high flame.
4. Turn down the flame very low.
Turn down the flame very low and cook on a very low flame.
*It is very important to turn down the flame and keep it very low to make the rice puffy.
*Cook approx. 6 min. for 1 rice cooker cup on a low flame, approx. 8 min. for 2 rice cooker cups, and approx. 10 min. for 3 rice cooker cups.
5. Turn off the flame and let the cooked rice steam.
Turn off the flame and place the pot on a pot stand. Wait for 20-30 min. before opening up the lids.
*Make sure not to burn yourself when you place the pot on a stand.
*Do not open up the lids till 20-30 min. have passed.
6. Open up the lids and break up some rice.
Open up the lids with mitten gloves or hand towels and break up some rice with a ladle.
*Make sure not to burn yourself when opening up the lids.

- Reviewed in the United States on November 4, 2024I’ve always cooked rice on the gas stove; never transitioned to electric rice cooker. I was moved to try the donabe by favorable reviews. I usually cook Thai Jasmine rice and only infrequently short grain rice, but both come out very much better from the donabe. In fact, I don’t believe I have ever had rice so fluffy and plump, nor that tasted so good before I purchased the donabe. And I want to emphasize that the rice absolutely does taste very much better. This size donabe cooks enough rice for my wife and me (1.5 cups, uncooked). If you have a larger family, it would probably behoove you to consider a larger size.
The down side: the instructions which accompanied the donabe were sparse and generally were only rough suggestions. Particularly frustrating were the Japanese measurements which I could only approximate. The donabe is very, very particular in the quantities of rice and water it requires, and even more so on the time/temperature profile which yields the best, outstanding results. The derivation of these were, for me, wholly by trial and error. It took about half a dozen attempts to work up the perfect recipe for my kitchen. I would have included my recipe here, but given different stove types and rice varieties, it’s probably best for you to develop your own.
Overall, I cannot recommend the donabe highly enough. Just know it will take a couple of tries to get it perfect, but please take that time; the reward is so very well worth it. I wholeheartedly agree with the earlier reviewer that this donabe is like a living part of the kitchen, akin to a perfectly seasoned cast iron pan. Plus, there is something to be said about having to slow down, plan and experience the development of your rice’s flavor.

Time to satisfy my curiosity about donabe pots. I hesitated to buy this one because one of the reviewers questioned its authenticity, which made me wonder if it was going to hold up on the fire. The others I looked at were about three-four times the price so I took a chance on this and I’m delighted. It’s well made, nice looking, fun to use, and makes the right amount for 2-3 people. I followed the instructions exactly and got a perfect pot of sticky rice for my Thai curry. It cleaned up easily, too. I couldn’t be more pleased, and can’t wait to try some other types of rice.

I need to return it, and no matter what reason I select for returning, even broken/missing parts, my only options are “troubleshoot on your own”. HOWEVER if you want to use the pot for anything else like making beans or really anything else then you should go a size up.
