  • WHAT IS PORCELAIN ENAMEL ON CAST IRON. It is glass that becomes bonded to the cast iron at high temperatures. A particulate of glass, called frit, is applied to the cast iron vessel and then baked at temperatures between 1200 and 1400° F. The glass frit melts and fuses to the cast iron, forming a bond. Porcelain enamel on cast iron is heat tolerant and impervious to water and other consumables.
  • EASY TO COOK AND CLEAN: The porcelain enameled interior has a smooth finish that minimizes sticking, promotes caramelization and resists staining. Although enameled cast iron is dishwasher safe, hand washing with warm soapy water and a nylon scrub brush is recommended to keep your Dutch Oven in tip top shape

Cooking And Caring For Your Lodge Enameled Cast Iron

1. Allow cookware to cool.

2. Although dishwasher safe, hand washing with warm soapy water and a nylon Scrub Brush is recommended to preserve the cookware’s original appearance. Citrus juices and citrus-based cleaners (including some dishwasher detergents) should not be used, as they can dull the exterior gloss.

3. If necessary, use nylon pads or scrapers to remove food residue; metal pads or utensils will scratch or chip porcelain.

4. Slight stains can be removed by rubbing with dampened cloth and Lodge Enamel Cleaner or other ceramic cleaner according to directions on bottle.

5. Dry cookware thoroughly before storing. Do not stack cookware.

Caribbean blue enameled cast iron dutch oven, as you combine the benefits of cast iron with the beauty of porcelain enamel. Creating cookware since 1896, Lodge has a rich history of an unparalleled dedication to quality and technology. This particular piece is perfect for making soups, stews, casseroles, and cobblers with superior heat retention and even heating. The vibrant enamel surface is resistant to acidic and alkaline foods. This Dutch oven is right at home on induction, ceramic, electric, and gas cooktops, even in your oven up to 500 degrees Fahrenheit. Additionally, this oven can handle colder temperatures for marinating or refrigerating foods. Like traditional cast iron cookware, porcelain enameled cookware starts out being cast in the traditional method. However, after this process, a glass particulate called "frit" is applied and the cookware is baked in ovens between 1200 and 1400 degrees Fahrenheit. This process transforms the frit into a smooth porcelain surface that is bonded to the iron. There is no exposed cast iron on the finished product, the black cooking surface and rims are transformed into matte porcelain. Traditionally shaped and more affordable than some European brands, Lodge Color enameled cast-iron is just as durable, requires no seasoning, and attractively serves at the table. Lodge infuses this 6-quart Dutch oven with two coats of hard-as-nails porcelain enamel, in a choice of several bright colors that are gradated (dark to light) on the exterior, and which are nicely set off by a cream interior. Embellished with concentric circles and a black knob, the lid, which also fits the Lodge Color 11-inch skillet, is oven-safe to 400 degrees F, so you can start a stew or casserole on the stovetop and finish by baking it in the oven. The 6-quart Dutch oven measures 10-3/4 inches in diameter by 4-1/2 inches deep.

Lodge enameled cast iron makes a smart choice due to its versatility--you can marinate raw meats in it, since it won't absorb odors or flavors, and you can braise, saute, simmer, and bake in it as well. Made in China to Lodge's meticulous specifications, each cookware item is first clad in matte black enamel before the color is added. The black rim that shows on the oven is actually the scratch-resistant matte enamel, not the raw cast iron. Though the Dutch oven is dishwasher-safe, washing by hand is recommended to best preserve the glossy finish. Look also for the pricier Lodge Enamel series, with its unique L-shaped lid knob, in a different set of colors and sizes to suit any kitchen. The clean up was a breeze as the enameled interior prevented the sauce from sticking. The pot weighs nearly 13 pounds so it is a nice weight. I would recommend using wood or silicone cooking utensils to prevent scratching the enamel. I would also suggest keeping the rubber pot savers that the pot is shipped with. I would highly recommend this great pot.
