Cooking with cast iron

Enameled cast iron is a remarkable and robust material that performs well with modern requirements for food preparation and cooking. Whether you choose to stir-fry, slow-cook a casserole, sear a steak or bake a cake, there is a shape that is suitable. Cast iron performs well for either slow cooking or high-temperature searing.

Cast iron can be used reliably on any heat source, including induction, and with any oven or grill. It has the ability to retain heat efficiently, which allows for use of lower heat settings in stove-top and oven cooking. On the table, a hot covered dish will keep food hot for second servings.

Cast iron can also be used to keep foods cold. A chilled dish becomes an ideal cold food server on a hot summer day. It can also be placed in the freezer for food storage or advanced food preparation.

Heat recommendations

Le Creuset cast iron cookware can be used on all heat sources including gas, electric solid plate or radiant ring, vitro-ceramic glass, induction, and ovens fired by gas, oil, coal or wood. When using any glass-topped stove, always lift the pan when moving it; never slide it, as this may damage the stove-top or the base of the pan.

Always match the pan’s base size to the stove-top heat zone to maximize efficiency, and to prevent overheating of the pan sides or damage to the handles.

Gas flames must always be confined to the base area, and must never extend around the sidewalls of the pan. Long handles should be positioned safely where they do not hang over the front of the stove or other heat zones.

Cleaning and Care

Always cool a hot pan for a few minutes before washing.

Do not plunge a hot pan into cold water. While Le Creuset’s enamel is designed to be the most durable on the market, thermal shock may still occur, resulting in cracking or loss of enamel.

If there are food residues, fill the pan with warm water and let soak for 15 to 20 minutes before washing. A brush can be useful for removing small food deposits, or for cleaning between the ribs on grills. Do not use scourers or abrasive cleaners on the cooking surface. Nylon or soft abrasive pads or brushes can be used to remove stubborn residues.

To avoid damaging the enamel, do not use metallic pads or harsh abrasive cleaning agents.

Light stains or metal marks caused by metal tools can be removed with Le Creuset cookware cleaner. An occasional cleaning with this product will also retain the new appearance of your pans.

Never store pans while they are still damp. Store pans in a dry cupboard or airy space away from steam.

I wanted a Le Creuset Dutch oven for years and finally made it happen. Part of me considered being a cheapskate and getting a $100 Dutch oven, but I decided I had to go with Le Creuset or nothing, and got the 5.5 quart version. I'm glad I made that decision. I only use this for my wife and me, but we have hearty appetites and like leftovers, so the 5.5 quart is not too big for us. The size is good for a whole chicken, 5 lb. pork shoulder, or beef roast.I've used my Dutch oven almost 10 times now for baking bread, making stews and curries, roasting pork shoulder and whole chicken, and frying food. My pictures are after those 10ish uses. The enamel cleans off really easily (might take a little soaking first), and the Dutch oven is holding up well. I've been babying my Dutch oven by cleaning it after it cools and storing it in its box after each use.The Le Creuset is nice and heavy, and holds heat really well. I now know why Le Creuset demands a premium price. If you're deciding between this and a cheaper model, spend the extra money.

This thing is a total workhorse and worth every single penny. I was hesitant to drop this much on a single pot, but it does everything, and very well. A prodigy of the kitchen is what I call it. So I don't have a gas stove as my condo building doesn't have gas service, so I'm relegated to those crappy ceramic stove tops. This pot handles it like a pro. I've made everything from chili, to brown butter lobster risotto, to cornbread, to braised you-name-it, to pot roast to soup... you get the point. ALWAYS comes out great. From the stovetop, to the oven, to the fridge - you are covered. I've seared, braised, baked, roasted, etc. in it and again, a workhorse. It just works great and heats evenly. I'm switching to an induction cooktop next year as I hate my electric and it's also compatible with that!!!!

It's heavy on it's own, and when totally filled can be pretty darned heavy, so keep that in mind. Also, to keep it clean - BAR KEEPERS FRIEND is the go-to. Cheap, and it really does work. Cleaning this is easy and nothing really sticks unless you totally burn it, but then again, just scrub for a few seconds with that bar keepers friend and boom - all gone. I love this so much I'm ordering a 3qt version. Oh, and it looks great. and you can literally serve right out of this. Highly recommended.

I looked at the 100 dollar models at a popular big box store and they were all chipped and the covers could have fit better. So far, this one has not chipped. It is like the pleasure of using a finely crafted ratchet set. It gives you a good feeling that can help one deal with inevitable frustrations. I love the large handles that are easy to hold onto even with bulky, oversized oven mitts. I got the 5.5 quart version so it is not quite so heavy when turning it over and over to wash it in the sink. The finish is very nice and the flame orange I find very attractive.

I had one like this, same color, about 40+ years ago. This is a larger one and I love it. I especially love the larger handles. Yes, it's still heavy but that's what makes the stew turn out soooo yummy!! Everything cooks so well in it. Even though I'm only cooking for two now, I use it for pretty much everything! Don't even remove it from the stove since it's also pretty to look at (and too heavy to move all the time :)) Can't go wrong with Le Creuset.

The seller does not deliver on their warranty claims. I've gone back and forth on it 10+ times with their CS, they keep claiming we used metal on it when we never did, all our utensils are plastic because I know how to take care of my kitchen gear and I want to have products that last.

So effectively I think they have this policy that they use for advertising but they instruct CS never to honor the claims, as far as I can tell.

I won't be buying from Le Creuset ever again, the deception and stress is just not worth it (nor is the price tag if the product is defective and they refuse to fix it).

This item may be overpriced for what you're getting, but it arrived in perfect condition and works very well. I had tried a similar item at about 1/3 the price, but was very disappointed with the way it cooked. This item has performed remarkably well, and, hopefully, will continue to work well for many years.
