The sumptuous debut cookbook from celebrated baker, activist, and pastry “it girl” Natasha Pickowicz * Named a Best New Cookbook of Spring 2023 by Food & WineEater, and more * A James Beard Award Nominee

Natasha Pickowicz is a creative force in the world of baking. Her pastries are uniquely delicious and surprising. She’s picked up three James Beard Award nominations for her time as a professional pastry chef. Her buzzy bake sales for Planned Parenthood and other nonprofits have raised hundreds of thousands of dollars. Now she shares her recipes and baking know-how in a debut cookbook brimming with the energy, passion, joy, knowledge, and spirit of generosity that define her work.

The recipes are fresh and uncomplicated, drawing on the author’s Chinese and Californian heritage. She pairs nectarine and miso in a tarte tatin and makes a layer cake with olive oil, mascarpone, and fennel. Black cardamom gets tucked into pecan sticky buns, and galettes go savory with kabocha squash. Brown butter is the secret to irresistible buckwheat chocolate chunk cookies.

And she’s a born teacher. Of course pastry requires a real focus on detail and technique, but the author is here at every step with invaluable tips: underbeat meringue; boil your plum stones to extract even more plum flavor; look for “first-press” yuzu juice; for the flakiest pie dough, first freeze your butter, then use a grater to get perfect shreds.

More Than Cake means baking to bring people together. It calls on you to prioritize pleasure. As the author writes, “Dessert is beyond simple calories and nutrition. . . . It spreads delight in a way that no other kind of dish can. This is something I think people really need—it’s not optional.” It’s a philosophy to live by.

Modern Layer Cakes

The cakes, soaks, fillings, and buttercream recipes in the chapter on layer cakes are meant to be mixed and matched to create the cake of your dreams. You’ll find five tried-and-true combinations—my most victorious layer cake triumphs—and you can use those as a guideline or a place to start. Those recipe sets are also helpful to understand how I build layer cakes, and those methods can be applied to a unique layer cake of your own devising. I’ve made you a map, but which path you choose is up to you. Let’s go!

Simply delicious and refreshingly creative
Thank you, Natasha, for this thoughtfully crafted book. I admire each recipe and the stories that inspired them! Your desserts truly are responsible for "symbolizing celebrating, decadence, romance, pampering.." As a born and raised Californian, the California influence in your dishes feel like home to me. So far I have made the passion fruit, coconut, tequila layer cake and sour glaze maple gingerbread cookies. I plan to make dishes from the "baking with vegetables" section next but I am enthralled by every recipe in the book and will inevitably make them all. The passion fruit, coconut, tequila layer cake was unlike anything I have baked before and I am still astonished I made something with so many complex flavors. This cake is perfectly boozy and everything I could want in cake. Layers in the cake included tequila and coconut soaked vanilla sponge cake, passion fruit and olive oil curd, coconut streusel, and whipped cream. The cake is covered in a passion fruit vanilla bean swiss buttercream. I topped my cake with gladiolus, a summer flower. To me, the tequila and coconut soak and coconut streusel are what distinguishes this dessert. The soak makes the cake moist and the coconut streusel provides the most perfect crunch. This book is teaching me to enjoy the pleasure that is baking. Before, I felt too impatient to follow a recipe so carefully but I am learning that a little discipline makes the most special desserts. Sharing my dishes with my friends and family has been the best part of it all...

If you like recipes that are not your everyday flavors, this book is for you! If you want basic, normal everyday recipes that you can easily get on the internet, then not so much.

If you are open to trying sweets and pastries that might be new to you, don’t hesitate, just buy this book. Not only are these unique flavors, they look to be well balanced, solid and well tested recipes. I have tried 3 in the first week of receiving this book with all 3 turning out fantastic. I have not doubt the others in this book will be the same.

The pictures are beautiful. The recipes are well written and clearly tested. There are some that do refer to another page which does not bother me but some people may not like that.

If you are adventurous with flavor, I highly recommend this book. If you want basic recipes, chocolate, vanilla, cheesecake, basic pastries, then you may not enjoy this book.

This is the best cookbook I've purchases this year, if not in the past several years. For staters it is a pure delight on the eyes, but most importantly the the writing is exquisite. The step by step instructions make it effortless for a baker of any skill to follow, while the ingredient combinations detailed in the book will inspire any professional to kick off their own personal flavor journey.
Natasha is so talented, passionate, charming and witty - it is a joy to find her energy seeping throughout the pages. You will not regret adding this book to your collection!

This is an innovative cookbook with approachable techniques. I’m one component away from finishing and assembling my black sesame, cream cheese, and pineapple layer cake and everything has turned out beautifully so far. There are plenty of amazing flavor combinations in this book, but the layer cake section is my favorite for its mix-and-match style and options for a number of tried and true combinations.

The other thing I love is that there are solid directions regarding portions of the recipe you can make ahead, allowing for a relatively low-stress project on the whole. I’m looking forward to getting this cake ready for birthday celebrations and I already know I’ll be making the espresso, chocolate, and hazelnut cake (in advance) for the holidays.

Edited to show the finished product! ♥️

This book gives all the right details to execute each recipe to perfection. I love that the recipes are provided sort of as building blocks that you can combine in your own different ways. The recipes themselves are inspiring and taste like flavor combinations you would find in a high-end restaurant. But Natasha makes it possible to have that experience in your own kitchen. I’ve baked her black sesame cake and each component is delicious all on its own. I think I will try more recipes from this book than any other recipes I’ve owned. 🌟
