My obsession with cake started in an unexpected way—with the humble Twinkie. It was tucked inside a Charlie Brown lunch box, unfortunately not mine, and that little cake opened up a whole new world. A lifelong love affair with all things cake was ignited on my very first day of kindergarten. Perhaps the average kid wouldn’t even have blinked at that iconic tube of sponge cake, with its freakishly white and delicious filling squished inside, as if by magic. But, I wasn’t average.
I grew up with my parents on a series of communes, which absolutely had its benefits. In 1969, I could toddle sans clothes around the Woodstock Festival with a backdrop of screaming guitars, as if it were any other day; in fact, I did just that.
I have visceral memories of sitting in my dad’s vast garden with the smell of tomato plants vining around me, mixed with dirt, pine trees, and wood smoke. The counterculture to which my parents adhered included a back-to-the-land philosophy on food. We lived in the Northeast Kingdom of Vermont, on a dirt road that was impassable by anything other than foot for long stretches of the year, due to mud or snow. Geography compelled our self-reliance. So, growing our own food was a necessity, not merely a fashionable trend, and we raised chickens for eggs and meat, a rather nasty-tempered collection of rams and sheep, and a cow for milk and the resulting cream that also became our butter.
My first kitchen memory as a wobbly toddler was standing inside the “Big House.” This was the only permanent structure on the land and where everyone on the commune gathered for cooking and a respite from the winter. The room was filled with singing and music while sharing the chore of churning cream into butter. That is probably why, to this day, I find music (and butter) essential parts of baking. If you know my Instagram baking tutorials, you’re familiar with the soundtracks that often start with Joni Mitchell and bring it all home with the dance beat of Drake by the end of the recipe.
Along with tending the gardens, my dad kept bees. The beeswax was transformed into ornate candles in a makeshift factory we had within a geodesic dome built out of VW car hoods (because it isn’t really a commune without a geodesic dome). We sold the candles at the local co-op, along with homemade granola and bread that my Aunt Melissa baked.
There was also sap collected from the maple trees on our eighty-plus acres of land. We brought the sloshing pails to a neighbor’s sugarhouse, where it was processed into syrup. Honey and maple syrup were the only two sweeteners I ever knew, and I was quite fine with that. Until that Twinkie. . . .
Today, those cylindrical cakes with the mystery creme on the inside are synonymous with junk food; but to a sugar-deprived flower child, they were a revelation—a parting of the seas, as it were, and the source of a newly born passion. I must have given my folks an earful about the deception they’d been pulling on me all those years. Carob was the actual lie—and decidedly not chocolate—despite all their lip service to the contrary. Grapes were fruit, period. Drying grapes in the sun to shrivel into raisins does not change them into candy. I fought that injustice with all the fervor and dedication those wonderful hippies had instilled in me.
The baking began soon after, tossing ingredients and a handful of hope in a bowl and expecting some sort of alchemy to return as cake. I was eight or nine years old before a miracle occurred by way of a Dutch Baby recipe, courtesy of my friend, and fellow commune-dweller, Sasha. That glorious mix of flour, eggs, and milk puffed to the point of exploding in the oven. We wolfed it down with maple syrup and slices of McIntosh apples from our yard. It was an auspicious beginning.
A parade of knowledge marched into my kitchen after that. First came the Time Life books on French cooking, which still hold space on my stuffed cookbook shelves. Through them, an attempt at a chocolate mousse was a gritty disaster, because I didn’t know that adding coffee didn’t mean Folgers coffee grounds. Lesson learned: mousse should be velvety, not chewy. The next batch was spot-on. Soon I had baked my way through Lee Bailey’s Country Kitchen, Baking with Julia, and Martha Stewart’s everything; Ina Garten’s brownies were on high rotation. Over the years, my affection for sugar only deepened, along with a determination to figure out its transformational powers.

But when she announced her CAKE book(she has several others dedicated to bread with another author),I was counting my days till this point. THIS BOOK IS A GEM !
This book opens with the quick guide/jump-to section so the reader can skip her bio(spans across next 5 pages) and plan the sweet adventure! I love the ingredients section as she starts with critical and most of the time confusing ingredients for the homecook(chocolate varieties,dairy varieties and even egg varieties). However I wonder if I can buy 12 vanilla beans to make homemade vanilla extract. This section is followed by equipment necessary for cake baking and decorating.
Next is where you master the cakes with the section of “Cake academy”. And it spans across 32 pages!!! This contains various techniques a baker should be known for to make a great cake. And she didn’t share these tips in her Instagram as detailed as in the book ! I love the instructional photos as well. Seems so easy to follow even to an inexperienced baker( I consider myself as an intermediate skilled baker).
Then it's time we start to say oohs and ahhs over and over again !!! First wave of cake recipes are pound cakes,quick breads and bundts. As a strong opinionated ambassador of baking with fruits(I saw this in her IG videos and posts),Zoe has reserved a whole chapter for baking with fruits(printed as fruit studded cakes-upside down or otherwise). And she encourages baking with in season fruits starting with a blueberry muffin cake. And who's gonna stop me from trying a Cinco leches cake y’all ? Yes I said CINCO ! Oh I'm so excited !
Layer cakes,loaves and classic sheet pan cakes are the next chapter and I will have more respect for sheet cakes like never before from Zoe’s recipes.This section also features the book cover’s image;the hot chocolate cake ! And her famous pavlova with prickly peaks is in here too !
Last but not the least, the recipe set for “fancy cakes” comes ! Yes she said that ! It's all fancy when we want to impress that special person and the special occasion. Next birthday….Next anniversary or next special feel good ordinary day..Here lies some bespoke cakes !
Final two chapters are dedicated to icing.frostings,ganaches,fillings and flourishes(that’s what special about Zoe:her carrot peel candy,cool whimsical chocolate bark and candied hazelnuts).
You can own as many cake books..
And you can follow as many baking blogs or instagram accounts.. Or bake your forever favorite passed down heirloom recipes … BUT nothing is going to be as charming and serene like Zoe’s. She has this hard to miss captivative vibe surrounding us and the dormant baker in each of us is just begging to come out and bake ! And from what I saw… She has done the entire photography from her home(yes I said that seeing her IG lives). I don’t know its because of the COVID-19.But I felt welcome,included and feels like she is my friend who I can think and be happy about the bakes I do is from her. We all need this kinda warm baking book in our lives ! I'm so impatient to bake from this book !

Layer cakes,loaves and classic sheet pan cakes are the next chapter and I will have more respect for sheet cakes like never before from Zoe’s recipes.This section also features the book cover’s image;the hot chocolate cake ! And her famous pavlova with prickly peaks is in here too !
Last but not the least, the recipe set for “fancy cakes” comes ! Yes she said that ! It's all fancy when we want to impress that special person and the special occasion. Next birthday….Next anniversary or next special feel good ordinary day..Here lies some bespoke cakes !
Final two chapters are dedicated to icing.frostings,ganaches,fillings and flourishes(that’s what special about Zoe:her carrot peel candy,cool whimsical chocolate bark and candied hazelnuts).
You can own as many cake books..
And you can follow as many baking blogs or instagram accounts.. Or bake your forever favorite passed down heirloom recipes … BUT nothing is going to be as charming and serene like Zoe’s. She has this hard to miss captivative vibe surrounding us and the dormant baker in each of us is just begging to come out and bake ! And from what I saw… She has done the entire photography from her home(yes I said that seeing her IG lives). I don’t know its because of the COVID-19.But I felt welcome,included and feels like she is my friend who I can think and be happy about the bakes I do is from her. We all need this kinda warm baking book in our lives ! I'm so impatient to bake from this book !

I love the pictures and the background on the author. I cannot wait to try some of these recipes. I hope they come out at least half the as good as the pictures look!!

I have all of Zoe’s bread books and there is not nothing I haven’t made that wasn’t awesome, thought out, tested to be perfect. This cake book is beautiful, pictures for every cake, very clear and short instructions! No hard to get ingredients, just plan good good cake making with a flare. Also a lot of Zoe’s baking common sense, I learn something from her from every bake, and it is the kind of knowledge that never leaves you. It was hard to decide what to make first, so I made sure I had stocked all the ingredients for three of my top picks, because of course I could not choose just one The Blue berry muffin cake, so easy, and smells heavenly. I didn’t make the crumble topping because it was one of those walk in the door from work and 15 minutes to the oven cakes we will use for breakfast or a snack, but next time definitely. The other two next on my list are the Black Forest Cake and the Grandma Ellen’s Rum cake. I will end up making every cake in the book because they are all fabulous and easy! Even a “Drive Through Sue” could make most of these cakes. Thank you Zoe for all your Pastry Chef Goodness! I am one of your biggest fans. :).

- Reviewed in the United States on July 15, 2023I love watching the show “Zoe Bakes” on Max. This cookbook has some of the cakes she’s made on the show. There is also a really great section where she explains many of the fundamentals of baking and how to do things in the recipe directions. I think this will be an enormous help to novice bakers. So really, people of all skill levels can make the cakes in this cookbook.

Most of them are far too complicated for me, and remind me of another author who has beautiful but incredibly complicated cake recipes. If I was a baker dedicated to cakes, I would want to explore this book in depth. I kept her cookie book.

- Reviewed in the United States on April 7, 2023Not only have I bought this for myself, but also for my co worker. I also made my sister and niece buy one. These are all fantastic, fail safe recipes. I always feel like I'm a good baker when I use this book because whatever I am making turns out exactly as it should. My new mantra in any baking conversation is "Zoë Bakes Cakes. The best cookbook you'll ever find!". As a matter of fact, the rest of my cake cookbooks are now just collecting dust on my shelf. I only use this one.

Baking one of Zoe Francois' cakes each week I've gone from the chocolate zucchini bundt to the carrot cake via the banana-nutella loaves - and am primed for the grape almond tube cake - and each recipe has been simple to follow, used fairly standard kitchen equipment & supplies - and the cakes have been easy on the eye & good to eat. What more needs be said!

Descubrí a Zoë en Instagram. Tienes recetas fantásticas, como el pastel de la foto, con ciruela y una mezcla de harina todo uso, integral y de almendra. Las instrucciones son claras y los ingredientes usualmente se pueden encontrar en México. Lo recomiendo mucho.
