It doesn’t get much more indulgently delightful than Fromager d'Affinois—a triple crème cheese. It’s pillowy, delicate rind surrounds a rich, creamy paste with a beautifully soft texture. And the longer this buttery, silky triple-crème cheese is left out, the more spreadable it gets. Rustic Bakery’s Olive Oil & Sel Gris Flatbread, with its generous crunch, is the perfect canvas for this milky cheese.

“This is a very mild, rich creamy that is heightened by serving it with champagne and fresh fruit. Don’t leave the rind behind, it is an edible part of this cheese.”

Allergens: Milk

  • The milk used in Fromager d’Affinois Excellence goes through a process called ultrafiltration.
  • Ultrafiltration is a process in which excess water is separated from the milk. This removes the liquid while retaining everything else (such as the proteins and minerals).
  • Fromager d’Affinois Excellence is a bloomy rind cheese. A rind is considered bloomy when it has that white, pillowy appearance (which develops as a result of a combination of molds).
  • The difference between a Brie—which is a double crème cheese—and a triple crème cheese, is the percentage of butterfat. Brie must have a minimum butterfat content of 60%, whereas a triple crème cheese must have a butterfat content of at least 75%. This explains why a triple crème cheese is so much more decadently rich and creamy.
