Set in its own 35-acre vineyard in the heart of wine-growing Mendoza province, Cavas Wine Lodge boasts an underground cava stacked with dozens of Argentina’s notable labels, vinotherapy baths in the spa, and award-winning bodegas just a short stroll away. The main house remains faithful to Spanish colonial traditions; sunlight floods into the cavernous sitting room and kitchen, where locally-grown olive oils, herbs and spices enrich its exceptional output. Each ‘room’ is actually a 900-square-foot adobe-walled apartment, set independently among the vines; a cool cream interior, slashed by blood-red llama-wool throws, leads to a stone-clad bathroom with stand-alone tub and mighty shower. Each apartment opens to its own Andes-facing patio with plunge pool; on the roof, a chill-out mattress provides 360-degree views of the bodega. When to Go: The sun shines on Mendoza for 330 days a year, but the February-April grape harvest is particularly colorful. Which room to book: The six apartments furthest from the main house command unsullied Andean views.
