As I am new to the Japanese style 70/30 edge, I was a bit disappointed that the technical information was all in Japanese. However, there is an abundance of information on the web on both the brand and sharpening instructions. The more I read and the more I use the knife, the more I am convinced I made the very best choice for my purposes.

I've mostly used German steel knives up until now, which are thicker and heavier, and I wanted to try something new. This knife was recommended to me by a friend who is a professional cook. It's lighter, thinner but still sturdy, and well-balanced. It glides through everything I've put it up against and keeps an edge well. Just use a honing steel once or twice a week and you probably won't have to even touch a stone for a long time. I think I may be a Japanese steel convert.
Loved product out of the box however it is flimsy, tip bent and will not keep a sharp edges. Seller will not replace or refund. Will not buy from this seller again.
