About the author

Twice named one of Time Magazine’s “100 Most Influential People” and awarded “Outstanding Chef” and “Humanitarian of the Year” by the James Beard Foundation, José Andrés is an internationally recognized humanitarian, culinary innovator, New York Times bestselling author, educator, Emmy-winner television personality, and owner of the award-winning José Andrés Group, which operates nearly 40 restaurants in the US and beyond.
In 2010, Andrés founded World Central Kitchen, a nonprofit organization that is first to the frontlines, providing meals in response to humanitarian, climate, and community crises. Andrés’ work has earned awards and distinctions including the 2015 National Humanities Medal from President Barack Obama, the 2017 Lifetime Achievement Award from the International Association of Culinary Professionals, and the Princess of Asturias Foundation’s 2021 Concordia Prize for his humanitarian work.
In 2023, Andrés founded the Global Food Institute at George Washington University in Washington DC, and he currently serves as the Co-Chair of President Biden’s Council on Sports, Fitness, and Nutrition. As a naturalized citizen originally from Spain, Andrés has been a tireless advocate for immigration reform.

His joyous approach to introduce the cuisines of Greece, Turkey and Lebanon include history, culture, gorgeous photos, thorough instructions and pronunciation guides. The flavors of these ancient cuisines very nearly float from the pages. Chef's tips, wine guides and supply resources are included. A real treasure!

Not only are the recipes clear and relatively easy, but the accompanying photos illustrate some of the techniques used for creating the foods. It serves as an instructional cookbook as well as a book of recipes.

Love all the work he does and this is the second book of his I own. I have made only a few side dishes from this one (they were lovely) but I just love reading it. When I have more time I will make a complete meal and try to mimic my wonderful meals from his restaurant, Zaytinya. Highly recommend.
- Reviewed in the United States on November 21, 2024I have always admired Chef Andres as one of the most imfluential cooks in the world. Also, because he realizes that he can still continue to learn from other cultures and incorporate these ideas into his own cooking.
His book, Vegetables Unleashed was transformative for me. I had been drifting into vegetarian cooking for several years and Vegetables Unleashed really changed the way I treat vegetables in the kitchen. Whole Roasted BBQed Cauliflower is a great example.
In Zaytinya he continues this. His involvement in World Central Kitchen has exposed him to diverse culinary traditions all over the world. His exposure to food traditions in the Middle East through his relief efforts opened his eyes to countries that have very ancient food traditions and forced him to explore their cooking methods and the way they used spices.
I applaud him for being open to new ideas but more so for his willingness to share these insights with others.
Zaytinya is a great addition to any library. Great recipes but just as important it is a bridge to understanding other cultures through their food traditions.

- Reviewed in the United States on April 5, 2024I recommend watching Jose Andres do a few talks and cook a few meals before diving into the book so you can appreciate this book to the fullest - not to say it is not an amazing book without getting to know his energetic, selfless, compassionate, unique etc. personality! As others have said, the photography is realistically amazing. If you follow the recipe, your meal will come out looking just as amazing. He offers ways to extend recipes and techniques to other vegetables to encourage you to grow in your own kitchen. This is not a cookbook that constricts but expands your skills. I also LOVE the blurbs before each recipe that make each one more welcoming and entertaining. Thank you, Jose!
