How to make a perfect italian coffee
|
|
|
|
---|---|---|---|
Fill the boiler up to the lower level of the safety valve, without exceeding it and using fresh water, possibly low in limestone. |
Select a quality blend, suitable for the production of coffee for the Moka. Fill the filter generously, without pressing the coffee powder, forming a small gutter and avoiding dust escaping on the edges of the boiler. Close the coffee pot, screwing the collector firmly onto the boiler and place it on the stove. |
The flame must never envelop the coffee maker, but remain inside the bottom of the same, in order to allow extraction in adequate times and not too quickly. As soon as you start to hear the typical Moka gurgle, the coffee is ready and you will need to turn off the fire immediately. |
Never let excess coffee boil: this would burn it, compromising its success and making it too bitter. Enjoy hot coffee, as soon as it is ready, remembering to mix the contents of the collector: the coffee extracted at the end, in fact, is less full-bodied than that leaked at the beginning of boiling. |

Because the rubber seal in the first Moka pot of another brand I bought did not seal well, I researched and learned that many people replace the original seal with a silicone seal of which I have provided a picture of with this review. I highly recommend purchasing and replacing the seal that comes with the Bialetti. Not that it was bad, but I didn’t want to take any chances with it and there was zero leaking or sputtering from the the sides of the moka pot with the new seal. Well worth it.
Though you don’t have to, I preheat my water in my water kettle then pour it into the moka pot not to exceed the level of the pressure valve inside the water reservoir.
Next, I fill to the brim the ground coffee holder gently pressing down on the coffee and then topping it off till its level with the edge. Make sure there is no coffee grounds on the rim because you want a tight seal.
Place the coffee grounds holder into the water reservoir taking care because the reservoir will be hot to touch. I use a dish rag to hold onto it while I screw the top carafe part on. Make sure its on tight.
Next, I place it on my burner, medium high temp. Make sure the handle part is not over the flame or heat and just put it at the edge of your cooktop burner. You don’t want it burning. It takes about 2 min or so for the carafe to fill. When its done you will hear sputtering sound. I will lift the lid just enough to see if any more coffee is coming out of the tube inside. Usually there isn’t and its done.
Remove from heat being careful to keep fingers on the black handle only as steam can escape at the lid hinge and let it sit for about 1 minute. Then pour and enjoy! Let the moka pot cool down before unscrewing it or just use a rag to hold it and unscrew it if you need another pot right away.
This pot made excellent espresso like I drank in Italy, Prague, and Budapest. I initially bought it to have a way to make coffee if I lost power…can use a Coleman camper stove or your gas ran stove top.
Its easy to clean, just rinse out with warm water and dry with a paper towel or rag. No soap!!! Some people don’t ever rinse theirs out but I found my espresso tasted better if I rinsed it all out with water only.
I hope this helps someone! Enjoy your coffee!

FYI to new Moka pot buyers when buying a moka pot that says something like “9 cups” they don’t mean 9 measurable cups like in baking or marked on bottles they mean 9 small Italian coffee cups. A 9 cup moka pot will probably give you about 2 standard coffee mugs worth of coffee with room for milk and sugar if that’s your taste.
Making the coffee is one thing but the clean up is time consuming. I first have to wait for it to cool down. The grounds go everywhere including underneath the top part of the pot where there is a gasket and metal filter. The bulk of the grounds are in the basket so I tip it and tap it onto a couple of paper towels. I wipe stray grounds of which there are plenty with more paper towels.
I then rinse everything and some grounds inevitably go down the sink where I am concerned they may accumulate and clog the drain. I am not sure if the smoother, richer taste of this coffee is worth the trouble. I did make some steamed milk with a dusting of sugar in an electric frother (those things are great, I will never try using the steam wand again) added a little sugar to the espresso and whipped it up a bit to get some foam and poured it all together.
That is a lot of work for a cappuccino. Is it worth it? Maybe once or twice a week but not for everyday.
