Cavatappi (corkscrews) belong to the family of dried, whimsical shaped pasta with their tubular, curled or corkscrew shape. The double-ended opening and the distinctive ridges mean that this pasta is perfect with less dense, more liquid sauces, all of which are captured inside it. Cavatappi (corkscrews) are particularly suited for preparing plates of pasta served with dense, colourful sauces of meat or fish, with green leaf vegetables or vegetables, or strong cheeses. Cold Spring Natural Water

We knead our semolina with cool spring water from the National Park of Majella at a temperature of less than 59° F to ensure our pasta maintains its firmness after cooking.

Bronze Drawplates

We shape our pasta through bronze drawplates to provide a rough surface similar to homemade pasta to better capture and retain sauce.

Low Temperature and Slow Drying

We dry our pasta slowly at low temperature to preserve both the original color and flavor of our durum semolina as well as retain all the nutritional value.

Cavatappi With Tomato and Black Olive Sauce

Ingredients (for 4 servings)

  • 12 ½ oz De Cecco Cavatappi
  • 5 1/3 oz black olives
  • 7/3 oz salted capers
  • 3 tomatoes

Preparation

  • Blanch, drain and peel the tomatoes removing the seeds and water.
  • Chop the pulp coarsely. Pit the olives, wash and chop in tiny bits.
  • Rinse the capers under cold water, drain and dry them. Put the olives, capers, garlic in the blender
  • Add oil and a bit of salt and blend until you reach a smooth texture
  • Pour into a saucepan and bring to a boil; add in the chopped tomatoes
  • In the meantime, cook the pasta in a pot with boiling salted water
  • Drain and dress with the sauce, adding 2-3 tbsp of cooking water
  • If necessary and mixing well. Serve immediately.

Fantastic pasta with great texture and flavor. This macaroni is perfect for red or white sauces or in a macaroni salad. All you need is boiling water to cook these for 12-15 minutes depending on preferences. We like them with a little bite to them and cook them 12 minutes and in Italy this is called cooking Aldente! For softer noodles simply cook a few minutes longer, strain out the water and then add your favorite sauce. Our homemade red Italian sauce (aka red gravy) is some of the best comfort food in the world.Simple red Italian sauce instructions. For best flavor prepare a sauce pan on medium temp and then add any olive oil (5 tablespoons or more) and then add fresh or bottled garlic (1 teaspoon) or a full clove diced. We always add about 1 pound of medium or hot Italian sausage links and cook them until brown on all sides but not burned. The Italian sausage adds more flavor than any herbs you can imagine!Once your sausage is browned add about 2 large 28oz cans of crushed tomatoes or tomato puree to the pan, followed by a pinch of salt and a pinch of black pepper. Fresh basil is a key ingredient, however dried basil also will add terrific flavor to your Italian red sauce. Use a generous amount of basil or about 1 tablespoons. Continue to cook on medium and making sure not to get the pan too hot and burn the sauce at the bottom of pan. Stir sauce about every fifteen minutes and if boiling too hot simply add a small amount of water. Cook your sauce at that temperature for about 1 hour.
